If the remains of the drone is destroyed enough that you can’t do a reverse lookup of what was connected to it you might not even be able to find the pilot even if they’re on camera at the time. What are they gonna do? Look through video of every single person looking at a mobile phone in the city? If it’s piloted from a mobile phone you’re going to look like anyone else.
The only real dangers are tracing where the drone comes from if it was purchased, or tracing what was connected to the drone. You can remove the connection issue by using a single-use throwaway phone for the event, fully destroying the phone then burying the remains. This leaves only the drone parts itself and the sources of their purchase, if you can do that in a completely diy way you can make it all totally untraceable.
