    My first exposure to beans were nasty af baked beans at school and I thought I hated beans for almost two decades.

    I think that actually might explain a lot of weird food tastes of yankees - their parents don’t have time to cook lots of different dishes, so they tend to have the same dozen or so meals on rotation until school. Then they get to school and it’s prison food, and that’s their first exposure to a new food, and it sticks in their brain until they have a really good experience to counteract it.

      i think the advent and marketing of mass produced canned food has a lot of blame here, so many people i know grew up thinking “canned X heated up in a pot/microwave” was just what X tasted like

        It’s even possible to make canned stuff taste really good, but you have to put the work in. Rinse a can of beans and a can of corn and throw that in a frying pan with oil, drain a can of tomatoes and add them later when the beans and corn are nice and seared, and then simmer with chili flakes. Yim yum.

        No one puts the work in. I know it’s one of my Special Interests so I try to be sympathetic towards people who don’t like cooking as much as I do, but you get a tasty treat at the end! It’s literally the best kind of chore, one that is literally always rewarding! I don’t get it.

        That was me with beets and mushrooms as a kid. Microwaved, canned, flavourless, rubbery garbage. Then I had a slice of pizza with mushroom on it and realized what a mushroom could taste like. Still took me until I was like 17+ to realize my parents can’t cook.

          Maybe I just have a really boring palate, but one of my mainstay meals is:

          • Microwave canned lentil soup
          • Microwave yellow Minute Rice
          • Combine
          • Stir

          And I actually, legitimately like it. Like, I no joke look forward to it. I’ve had it 3-4 times a week for years without complaint.

            No, seriously, I’ve never found a microwave rice that was good. It’s way better to make a batch in the rice cooker and freeze it in portions, then microwave that.

            yeah sounds fine, the big offender is vegetables anyway, canning absolutely destroys them but legumes hold up to canning really well in my experience. and it sounds like you’re getting stuff that’s already seasoned which avoids the other problem with a lot of canned food, which is people’s parents didn’t know how/bother to season it well
