I think poultry farms are easy to scale, industral feed can be cheaper than traditional methods. And honestly traditional methods suck at producing enough volume. here in mexico Bachoco produces most of the eggs and poultry, I live in a small country town in the middle of the rainforest most people here have hens, but the local shop still sells Bachoco eggs, because the one or 2 hens people have don’t produce enough eggs for a family and Bachoco eggs are cheap enough. To put it in perspective, an industrial chicken can be half or even a third of the prices per kg as a local chicken. And it’s much fattier and tastier.

There are other large industrial brands but they are very minor.

Ok im that time it was probably very doable if say you were a main landowner surrounding a major city, easier if it’s a coastal city in a land protrusion. But that’s just ONE city.

I think it’s more a matter of how impoverished the pesantry are, if they have enough land, food waste, to keep many hens, there is no place for an egg monopoly, if they can’t, there is always sulprus demand. And so there is a place for industrial egg producers. Older Chinese people seem to be very nostalgic about eggs, so they were probably more impoverished than modern Mexican peasants.

That being said, you are correct, it’s likely her grandpa had to he egg monopoly in a small region rather than all of china.
